Low Carb Recipes Your Family Will LOVE!

Introduction:

You know the best feeling in the world is as a mother? When everyone in your family will eat and enjoy dinner and not want you to cook 4 other meals just because they don’t like what you are cooking that night for breakfast, lunch or dinner.

I LOVE to cook and bake for my family and friends, I really enjoy hosting parties, having people over and making them feel welcome. I pour so much love and time into trying new recipes, baking and cooking. My favorite thing ever is seeing my family and friends’ reactions when they try my meals and desserts and their faces just light up with joy because they truly enjoy it!

The hardest part for me is the temptation to try everything I make because honestly I have no self control when it comes to sweets and desserts. I have a sweet tooth and being Type 1 diabetic isn’t a good mix. In the near future I want to try and make healthier versions of desserts for other diabetics to enjoy like myself and not have to sacrifice their love for sweets and desserts.

Below I am sharing some amazing recipes that my family and I enjoy and I hope you enjoy them as well! At the end of each recipe it will list what ingredients you can substitute for healthy low carb alternatives.

Don’t forget to visit my website and see what it has to offer! Carb Counting Meal Prep

Caramel flan originated in ancient Rome as a savory egg-and-eel dish before evolving into a sweet custard and spreading via the Spanish Empire to Latin America, where it became a staple dessert. Spanish cooks added the signature caramel topping, making it a popular 15th-century treat.

*THIS RECIPE IS MADE FOR A BUNDT CAKE MOLD*

Ingredients:

2 cups of granulated sugar

2 cans of sweetened condensed milk

2 cans of evaporated milk

8 large eggs (room temperature)

8oz of Cream cheese (room temperature)

2 tbsp of vanilla extract

In a saucepan on low medium heat add 2 cups of granulated sugar and melt sugar by stirring frequently until it has melted down to prevent from burning, it should only take a few minutes.

Into your mold you’re going to add non-stick cooking spray evenly coated on your mold. If there’s any excess gently tap it out with a paper towel to absorb the excess oil.

Pour your melted sugar (caramel) evenly into the mold, once fully coated with non-stick cooking spray.

Now to make the mixture:

In a blender add:

8oz of cream cheese (room temperature)

2 cans of sweetened condensed milk

2 cans of evaporated milk

8oz of cream cheese (room temperature)

2 tbsp of vanilla extract

Blend until well combined.

Strain the mixture through a fine mesh strainer into the mold to top the caramel (this is done for a smoother texture)

Cover it up with foil, place it into a baking dish, pour water into the baking dish slowly and carefully, fill it halfway to create a water bath (this will help bake the mixture evenly)

Bake at 350 degrees fahrenheit for 1 hour & 45 minutes

Remove the Flan from the water bath carefully & let it cool in the mold for at least 4 hours or overnight in the refrigerator is best!

I got this AMAZING recipe from one of my favorite Foodie Influencers on Youtube @LoveKariCooking , check her channel out!

This recipe has been a HUGE hit at my events & family gatherings I take it to, people always go back for seconds!

You can also use this recipe for chocoflan (with chocolate cake on the bottom half of the flan) . This recipe is just doubled if you are making regular flan.

*You can substitute out the Evaporated milk for Coconut Milk for a low carb option.

ENJOY!

Introduction

Generation Alpha—those born between roughly 2010 and 2025 who are growing up in a world where artificial intelligence is not new or emerging; it is simply part of everyday life. Unlike previous generations who adapted to evolving technology, Gen Alpha has been immersed in AI-driven platforms, tools, and systems from the very beginning. From voice assistants to personalized content feeds, AI has fundamentally reshaped how this generation experiences the internet.

As a result, the internet for Gen Alpha is faster, more intuitive, and more responsive but it also presents new challenges in areas like attention span, critical thinking, and digital trust. Understanding how AI has impacted the internet for Gen Alpha provides insight into not only their behaviors, but also the future of online interaction.

With a new generation in town and a shift in marketing there are a lot of changes going on on social media and the internet. With Gen Alpha as the new generation there’s a lot of changes happening and evolving social media is doing.

You have to understand that this new generation has never:

Known a world without electronics

Is more diverse and connected in today’s world

Consumes media at lightning speed (affects their attention span)

Traditional marketing won’t cut it for Generation Alpha, they are very tech savvy and know their way around the internet, AI and the use of electronics. Now that AI is on every platform on the internet, AI has transformed the internet into an interactive learning environment. Instead of passively reading or watching tutorials, Gen Alpha can engage with AI tools that explain concepts, answer follow-up questions, and adapt to their pace. According to certain articles based on AI it is stated that Benefits include:

Personalized learning experiences

Immediate feedback and clarification

Increased engagement with educational content

However, there is a trade-off. Constant access to quick answers can reduce patience for deeper learning and critical thinking and that is how AI impacts Generation Alpha.

As stated in this article AI and Kids: What Parents need to know, AI is everywhere. Recent research shows 73% of kids ages 13 to 18 say they’ve interacted with an AI chatbot/companion at least once and 50% of kids are using AI companions regularly. And yet, only 30% of parents are talking to their kids about AI usage. That is huge on how AI impacts Gen Alpha.

Challenges Around Trust and Authenticity

As AI-generated content becomes more realistic, distinguishing between real and artificial information is increasingly difficult. Deepfakes, AI-written articles, and synthetic media are now part of the digital landscape.

For Gen Alpha, this means:

Developing skepticism at an earlier age

Learning to verify sources and information

Navigating a more complex digital truth

The internet is no longer a space where “seeing is believing,” making digital literacy more important than ever.

Trust, Misinformation, and Digital Awareness

As AI becomes more advanced, it is increasingly difficult to distinguish between real and artificial content. Deepfakes, AI-generated images, and automated text are becoming more common across the internet.

For Gen Alpha, this creates a more complex digital environment where trust cannot be taken for granted. They must learn to question sources, verify information, and think critically about what they see online.

For Gen Alpha, this means:

Developing skepticism at an earlier age

Learning to verify sources and information

Navigating a more complex digital truth

This shift places a greater emphasis on digital literacy. Skills such as fact-checking, source evaluation, and media awareness are no longer optional, they are essential.

The idea that “seeing is believing” is no longer reliable in an AI-driven internet.

Changing Social Interactions

AI is also reshaping how Gen Alpha connects with others online. From algorithm-driven recommendations to AI-generated influencers and chatbots, social experiences are becoming more hybrid.

Notable shifts:

Increased interaction with AI personalities

Growth of parasocial relationships

New forms of digital identity and expression

The line between human and AI interaction is becoming less clear, influencing how relationships are formed and maintained.

Hyper-Personalization and Algorithm-Driven Content

AI has transformed the internet into a highly personalized environment. Platforms such as TikTok and YouTube use advanced algorithms to analyze user behavior and deliver content tailored to individual interests.

For Gen Alpha, this means their online experience is uniquely curated from the moment they start using these platforms. Videos, ads, and recommendations are all shaped by what they watch, like, and engage with.

This level of personalization has several effects:

Content feels more engaging and relevant

Discovery becomes passive rather than intentional

Users may become confined to “filter bubbles”

While this creates a seamless user experience, it also limits exposure to diverse viewpoints and ideas, which can impact how Gen Alpha understands the world.

The Rise of AI-Assisted Creativity

AI has dramatically lowered the barrier to content creation. Gen Alpha can now generate videos, images, music, and written content with minimal technical skill.

Instead of needing advanced tools or training, they can focus on ideas and storytelling while AI handles execution.

Key outcomes:

More young creators entering digital spaces

Faster content production

Blurred lines between human-created and AI-generated work

Creativity is becoming more accessible but also more complex when it comes to originality and authenticity.

Conclusion

AI has fundamentally transformed the internet into a responsive, personalized, and highly interactive environment, one that Gen Alpha navigates effortlessly. From how they search for information to how they create and consume content, AI is deeply embedded in every aspect of their online experience.

While this evolution offers incredible advantages in speed, accessibility, and creativity, it also introduces challenges on how AI impacts Generation Alpha related to attention, authenticity, and critical thinking.

As Gen Alpha continues to grow, their relationship with AI will likely define the future of the internet itself, making it essential to balance innovation with awareness and digital responsibility.

Whether you have been in the business industry for months or years and trying to figure out how to market your business, lets just say there is a strategy behind it including: Target audience, budget, how to effectively reach and engage with your target audience, buyer behavior etc.

It comes with a strategy of being able to get your message across to your audience with what your company represents and stands for. You need to make sure you get your message across at the right time so it can reach the correct audience.

Commercials, Billboards, Radio ads, magazine ads etc have been around for years, in 2010 is when there was a huge increase in “digital & social media marketing” because of smart phones and apps surpassing traditional marketing in many sectors due to its ability to offer real time, precise, real time tracking and personalized tracking.

The big question that comes first is: What is marketing? And How digital marketing helps in business growth? Well, The definition of marketing in the dictionary is: The activity or business of promoting and selling products or services, including market research and advertising. Digital marketing will help your business with growth in many ways, below there will be lists including how marketing will help your company with every aspect that goes into marketing for businesses.

Digital marketing effectively began in 1990, when the Archie search engine was created as an index for FTP (File Transfer Protocol) sites. In the 1980s the storage capacity of computers was already large enough to store huge volumes of customer information.

Like everything else in the world as time goes by, marketing started to evolve with the changes happening throughout the world. For many years marketing stayed the same, everyone knew how to promote their products, what to do to get their audiences attention and what call to action they would need to hook their customers into their business.

Marketing includes:

Research

Branding

Strategy

Communication

Customer experience

Comparing both types of marketing, this website: https://online.mason.wm.edu/blog/traditional-marketing-vs-digital-marketing provided great insight on both types of marketing as seen below.

Traditional marketing Vs. Digital Marketing:

Traditional marketing is any type of offline advertising for example: flyers for any event or company business, direct- response mail, Super-bowl commercials, or an advertisement in a magazine.

Traditional marketing includes:

Print Advertising: compromises advertisements in newspapers, magazines & journals

Broadcast Advertising: refers to radio and television commercials

Telemarketing: is the practice of calling prospective customers on the phone to solicit interest in a promotion or service.

Direct Mail: Encompasses sales and marketing materials sent directly to the consumer, often unsolicited. It’s also commonly referred to as junk mail.

Digital marketing refers to all forms of marketing that takes place online. This includes sponsored Facebook posts, banner ads , Youtube videos and email newsletters. Many times informational blog posts fall into this category of marketing.

Common forms of Digital Marketing:

The following forms of digital marketing are the most commonly used forms of digital marketing, these forms are utilized to have your customers engage online.

Pay-per-Click (PPC): Advertising in which marketers bid on select keywords and phrases. The website displays the winner’s ad, and the marketer only pays for each user’s click on it.

Email Marketing: Essentially direct mail marketing for the digital age. Marketers send emails to prospective customers to raise awareness, drive engagement or accomplish other goals of the marketing campaign.

Content marketing: a less direct approach that lets brands engage with consumers by providing value, usually in the form of education. It often takes the form of an informative blog post or video.

Search engine optimization (SEO): the practice of applying methods to websites and web pages so they appear higher on search engine results pages (SERPs). SEO is often used in conjunction with content marketing to drive organic search traffic to the content.

Becoming a marketer I have now realized that in today’s world of marketing and in the business industry that not all companies, small businesses, entrepreneurs, or even local service providers understand the importance of marketing correctly for their businesses.

Why Is Marketing Important for a Business?

Builds Brand Awareness:

Helps customers recognize and remember a business

Creates trust and familiarity

You are exposing your business for new customers

Drives Sales and Revenue

Lead generation

Nurturing through email marketing

Conversion strategies

Creates Competitive Advantage

Differentiation

Positioning

Unique value proposition

Builds Customer Relationships and Loyalty

Retention is cheaper than acquisition

Personalization and community building

 Supports Long-Term Business Growth

Sustainable pipelines

Brand equity

Market expansion

All of this helps your business out and what blows my mind is that in 2026 there are still small businesses that are wanting to grow their business but don’t market their business well.

For instance I have noticed that the majority of hispanic small business owners are not marketing their businesses well to where it brings them new customers and make that customer loyalty and returning customers that will benefit them in the long run.

It will drive so much success in your business if you put yourself out there and take a chance, they are slowly starting to evolve with digital marketing such as social media marketing, Tiktok promotional videos, or facebook business pages to grow their following on social media.

So many small businesses are shocked at what social media marketing can do for their small business, what an influencer on social media reviewing their business or services and leaving a good review and it reaching hundreds to thousands of people around the world via social media, it builds their customer retention, brings familiarity to the industry they’re in and most importantly they build a great community around them that will show support in time of need.

The cost of not marketing is when businesses struggle because businesses rely only on word-of-mouth, inconsistent revenue, low visibility, competitors taking market share and stagnation. Like the saying says “Marketing is not optional, Invisibility is expensive.”

Marketing is an Investment, NOT an Expense:

ROI: your return on investment (ROI) is a simple way to measure an investment’s profitability, showing how much profit you made (or lost) compared to the initial cost, usually as a percentage, helping you see how efficiently your money worked. It answers: “For every dollar I put in, how many cents did I get back?”. A positive ROI means profit; a negative one means a loss, and a higher percentage is generally better.

Long-term brand value: the sustainable, measurable financial and strategic worth a brand accumulates through reputation, customer loyalty, and trust over many years. It drives higher pricing power, reduces market volatility, and fosters repeat business, acting as a crucial, intangible asset for sustained growth.

Customer lifetime value: the total projected revenue a business can expect from a single customer throughout their entire relationship. It is calculated by multiplying the average purchase value by the purchase frequency and average customer lifespan.

There are so many resources available to help you look into marketing for your business, so many pros and how it will bring growth to your business, all things marketing may seem like a lot but once you get the information you’re looking for and get a breakdown it will all make sense on how it will benefit your business.

This delicious dish can be made into so many different dishes such as: tostadas, burritos, quesadillas fritas (deep fried corn quesadillas). To top off this delicious authentic dish you can add: shredded lettuce, sour cream, and a homemade salsa that you can find in my precious blog!

Tinga holds a special place in my heart, this recipe brings back nostalgic memories of when I visited Mexico for the very first time back in December of 2012. I visited Zacapu, Michoacan where my parents are from and the first thing we ate were Tinga de pollo fried quesadillas when arriving, everything was so new to me, experiencing the culture that we’ve been shown to embrace since we were little, seeing how things were so different in a new country and trying new foods.

There’s so much to explore and living a little bit of their culture when I go is so freeing for my soul.

The history behind such an authentic dish is AMAZING! Tinga de pollo Originated in Puebla’s Colonial Era, Tinga is a beloved Mexican dish with roots in Puebla, Mexico, a region celebrated for its rich and diverse culinary heritage. Believed to have originated during the colonial era, tinga reflects the blending of Indigenous Mexican ingredients with Spanish culinary influences, a hallmark of Puebla’s traditional cuisine.

Over time, the dish became closely associated with its signature ingredient: Chipotle chiles in adobo. These smoky, slightly spicy chiles define tinga’s bold flavor and distinguish it from other Mexican stews.

Before Spanish colonization, Indigenous communities in central Mexico relied heavily on tomatoes, chiles, and onions to create flavorful sauces. When the Spanish arrived, they introduced ingredients such as chicken, pork, garlic, and cooking fats, which were gradually incorporated into local cooking. This fusion gave rise to dishes like tinga- a simple, hearty, and deeply satisfying dish.

By: Diana Vargas

“Do you know where your food really comes from?”
It’s a question more and more consumers are asking each time they pick up produce or order a meal at their favorite restaurant or café. The farm-to-table movement, once a niche trend, has evolved into a powerful shift in how people think about food. Today’s consumers; especially those between 21 and 35, care deeply about what’s on their plate, how it got there, and who made it possible.

This growing demand for transparency is reshaping the entire food industry, from small family farms to major restaurant chains. In this article, we’ll explore what “farm to table” really means, why it matters, how businesses are adapting, and how technology is driving the next era of food honesty.

What “Farm to Table” Really Means

At its core, farm to table means creating a direct connection between the people who grow our food and the people who eat it. Rather than passing through multiple processors, distributors, and wholesalers, food travels a shorter, more traceable path from local farms to consumers’ tables.

This approach emphasizes:

Freshness

Sustainability

Community support

When restaurants source ingredients locally, they often get produce picked that very morning resulting in better flavor and nutrition. Consumers, in turn, enjoy meals that are not only delicious but also environmentally responsible.

What began as a culinary trend has evolved into a cultural shift. Farm to table reflects a growing commitment to ethical eating where transparency, sustainability, and responsibility go hand-in-hand. So many around the United States are now eating clean and not much processed food, and have gotten into healthy habits like exercising, consuming clean whole foods.

Why Transparency Matters to Consumers

The modern diner, restaurant and cafe doesn’t just want to eat well, they want to eat consciously. Here’s why transparency has become such a crucial part of the farm-to-table philosophy:

Health Awareness: People are increasingly mindful of what’s in their food. They want clear information about ingredients, allergens, pesticides, and processing methods.

Environmental Concerns: With climate change top of mind, consumers are choosing restaurants and brands that minimize waste, reduce carbon footprints, and source sustainably.

Ethical Practices: Today’s shoppers care about the people behind their food — from fair wages for farmworkers to humane treatment of animals.

Trust & Loyalty: Transparency builds trust. When customers know exactly where their food comes from, they’re more likely to become loyal advocates for that brand or restaurant.

“Transparency isn’t just good ethics, It’s good business.”

How Businesses Are Adapting

The farm-to-table movement has encouraged food businesses of all sizes to reimagine their sourcing, operations, and storytelling.

Farm Partnerships: Restaurants are partnering directly with local farmers to ensure ingredient quality and freshness. Many now feature their partners on menus, showing guests exactly who grew their produce.

Traceable Supply Chains: Businesses are adopting systems that track ingredients from origin to plate — sometimes including small table signs noting who harvested the greens or where the cheese was made.

Sustainable Sourcing: From organic and non-GMO to fair-trade certifications, transparency in labeling has become a selling point.

Open Kitchens & Tours: Giving customers a behind-the-scenes look builds authenticity. Farm visits, cooking classes, and open kitchens invite diners into the process.

These changes don’t just appeal to conscious consumers, they strengthen local economies and create a sense of shared purpose between producers and patrons.

The Role of Technology in Food Transparency

Technology has become one of the most powerful tools supporting the farm-to-table mission. Innovations are making it easier than ever to track, verify, and share information about food origins.

Blockchain Tracking: Blockchain technology allows every step from planting to shipping, to be recorded in a secure digital ledger. Consumers can scan a code and see their food’s complete journey.

Digital Labels & QR Codes: Many food brands now use QR codes that reveal sourcing details, nutritional info, and even the farm’s story.

Social Media Storytelling: Farmers, chefs, and brands use social media platforms to show transparency in real time, from harvest videos to behind-the-scenes kitchen content.

Online Reviews & Accountability: Transparency extends to how businesses handle feedback. Open responses to customer reviews reinforce trust and encourage continual improvement.

Technology is no longer just a convenience, it’s a bridge between farms and tables.

Challenges in Maintaining Transparency

Despite its many benefits, achieving full transparency isn’t easy. Businesses often face several challenges:

Cost Barriers: Local, organic, or small-batch sourcing can cost more, especially for restaurants operating on tight margins.

Supply Chain Complexity: Larger brands may struggle to track every ingredient across multiple suppliers.

Greenwashing: Some companies exaggerate claims of sustainability or “local” sourcing. Consumers are becoming more savvy, looking for proof rather than promises.

Balancing Honesty with Profitability: Being transparent doesn’t mean overwhelming customers with technical details; it’s about clarity, honesty, and balance.

Transparency is an ongoing commitment, not a one-time marketing slogan.

How Small Food Businesses Can Embrace Transparency

You don’t have to be a major chain to join the farm-to-table movement. Small businesses can take meaningful steps to make their sourcing and practices more open:

Start Local: Build relationships with nearby farms, farmers markets, and artisanal producers.

Show Your Story: Use your website, packaging, or social media to tell customers where your ingredients come from and why you chose them.

Certifications & Standards: Display any organic, fair-trade, or sustainability certifications clearly these badges build trust.

Customer Engagement: Host tasting events, farm tours, or “meet the farmer” days to strengthen the connection between your brand and the community.

These efforts may seem small, but they create lasting impact turning customers into loyal advocates.

The Future of the Farm-to-Table Movement

As consumers continue to demand honesty and authenticity, the farm-to-table philosophy will only grow stronger. We can expect:

Greater Regulation: Governments and industry groups may standardize definitions and labeling for transparency claims.

Technological Expansion: Blockchain, AI, and digital tracing will become standard tools in supply chains.

Consumer Empowerment: The next generation of shoppers will expect complete access to product origins, farming practices, and environmental impacts.

Food transparency isn’t a passing trend, it’s the future of the food industry.

Conclusion

From farm partnerships to digital transparency tools, the farm-to-table movement is redefining what it means to eat responsibly. Businesses that embrace transparency aren’t just meeting consumer expectations, they’re building a more ethical, sustainable, and connected food system.

So, the next time you dine out or shop at your local farmers market, ask yourself: Do you know where your food really comes from?
If the answer is yes, then you’re already part of the movement shaping a fresher, fairer, and more transparent future.
